Gut-Friendly Lemon Grape Gelée Bites 🍇🍋

INGREDIENTS

  • 6 lemons, sliced in half & hollowed out (reserve juice)
  • ¼ cup coconut sugar
  • ½ cup water
  • ½ cup fresh lemon juice (from the lemons you hollowed out)
  • 2 envelopes unflavored gelatin
  • ½ cup Live Soda Juicy Grape
  • ¼ cup honey (or agave)

 

STEPS

1. Prepare limes: Cut lemons in half. Scoop out flesh, squeeze juice, and set juice aside.

2. Make simple syrup: In a medium saucepan, combine coconut sugar and water. Stir over medium heat until sugar dissolves (do not let it boil). Remove from heat.

3. Bloom gelatin: Sprinkle gelatin over the lemon juice and let sit for 5 minutes. Stir to combine.

4. Dissolve gelatin: Add the lemon–gelatin mixture into the warm sugar water. Heat over medium for about 3 minutes until gelatin dissolves fully (don’t boil). Remove from heat.

5. Add flavor: Once slightly cooled, stir in Live Soda Juicy Grape and honey/agave.

6. Fill lemons: Pour mixture evenly into the hollowed lemon shells.

7. Chill: Refrigerate overnight.

8. Serve: Slice lemon halves into wedges before serving.
